1 teaspoon salt<br />
1 teaspoon baking soda<br />
1 teaspoon baking powder<br />
1 cup buttermilk</p>
<p>1 egg<br />
1/2 cup butter &#8212; melted<br />
1/2 cup honey</p>
<p><strong>FOR BANANA MUFFINS:</strong><br />
3 bananas &#8212; mashed<br />
1 teaspoon cinnamon<br />
1/2 cup nuts</p>
<p><strong>FOR APPLE MUFFINS:</strong><br />
2 medium apples &#8212; grated<br />
1 teaspoon cinnamon<br />
1/2 teaspoon nutmeg</p>
<p>Combine dry ingredients. Combine wet ingredients and add to dry.</p>
<p>Bake at 400 for 20 minutes</p>

			<content:encoded><![CDATA[<p>1/2 cup butter &#8212; softened<br />
1 cup granulated sugar<br />
2 eggs<br />
1 teaspoon vanilla<br />
1 teaspoon orange peel<br />
1 cup mashed bananas</p>
<p>2 cups whole wheat flour<br />
1 teaspoon baking soda<br />
1/2 teaspoon salt<br />
1/2 teaspoon nutmeg<br />
1/3 cup buttermilk<br />
1/2 cup pecans &#8212; chopped</p>
<p>Cream butter and sugar in a large mixing bowl<br />
Add eggs, vanilla and orange peel, and beat well.<br />
Add banana; mix well. Combine flour, salt, soda, and nutmeg<br />
Add to batter alternately with buttermilk mixing after each addition.,<br />
Stir in nuts.<br />
Makes 1 (5x9x3&#8243;) loaf.<br />
Bake at 350 for 50 &#8211; 60 minutes, or 18 cupcakes for 25 minutes.</p>

1 1/2 Cups Whole Wheat Flour</p>
<p>1 Teaspoon Baking Powder<br />
1 Teaspoon Baking Soda<br />
3/4 Cup 2% low-fat milk<br />
1/2 Cup Honey<br />
1/2 Cup Unsweetened applesauce<br />
2 Tablespoons Butter</p>
<p>1 Egg</p>
<p>Blend dry ingredients. Add liquid ingredients and stir just enough to combine.</p>
<p>Bake @ 400 for 12-15 minutes.</p>
